Two European Meat Recipes
Karelian stew
(recipe from Finland)
Ingredients for four people:
450gr (1 lb) beef, diced
450gr (1 lb) pork, diced
2 carrots, diced
2 turnip mustards
1 onion
20 grains of black pepper
2 bay leaves
Salt
2 tbsp of butter
Directions:
Preheat the oven at 150ºC (300ºF). Melt the butter in a frying pan and stir fry the meat (preferably one quarter at the time, to get better results), until light brown. Set aside and use the same butter to sauté the onion. Put all the ingredients in a large ovenproof pan, cover with water, then cover the pan with a lid and cook for at least three hours, open the oven door from time to time to check the meat: it will be cooked it is tender and the dices will easily break and fray. Make sure not to over cook it or the meat will be too dry. Serve hot with potatoes on the side.

Mutton meatballs
(recipe from Greece)
Ingredients for four people:
2 tbsp extra virgin olive oil
½ onion
250gr (9 oz) mutton, minced
Zest of one lemon
2 cloves of garlic
1 sprig of parsley
1 slice of white bread
½ glass of milk
Salt and freshly ground black pepper
1 tsp nutmeg
2 eggs
Oil for frying
Juice of one lemon
Directions:
Marinate the mutton meat with the lemon zest, garlic and parsley for one hour.
Sauté the onion in the olive oil on a low heat for about 10 minutes, add the mutton and cook for about 30-40 minutes.
Tear the bread into pieces and soak it in the milk, and add it to the meat. Also add salt, pepper, nutmeg and the eggs, and gently mix everything together. Using the palm of your hands form balls the size of a walnut. Coat them in flour and deep fry them. Pat them dry with kitchen paper and serve them hot.
